You can barely hear it, but before Kasey Chambers starts playing "No Time To Cry" (written by Iris DeMent) she says "This is my favorite song." It’s in my Top 3.

Emmylou Harris did  a beautiful cover of Pancho And Lefty way back when she was a lot younger.  Really beautiful.  

I enjoy the way that Patricia Barber and Jacintha both covered Light My Fire.

The ongoing lyrics thread in this forum made me think of two covers of It's All Over Now Baby Blue that I really like.

Gal Costa covered it in Brazilian, and Bonnie Raitt did a nice cover for a compilation disc; I think it may have been on the sound track for Steal This Movie.
