Ess Sabre Dacs

To my knowledge, Sabre's are in the Mcintosh 500, The Wyred4Sound Dac, and the Eastern Electric, and the Wavelength Denominator. I've heard the Mc500 and it's very good. I do need toslink.
Can anyone comment on the others?

Yes, the power supply is VERY important. One of the best DACs I've ever heard was the Altmann Attraction (battery powered). That DAC allows the music to flow.
