The Sophia 845 is not really an 845-equivalent tube, it draws only 1A heater current.
Since the Cary 805 heater power supply is not regulated, the heater voltage will shoot up probably 20% and the output tube will not last long. Clearly not a good idea, unless you have the technical knowledge and tools to modify the amplifier.
I am not familiar with Sophia's 211 nor have ever seen a data sheet.
