Three come to mind,

Smokestack Lightin' with The Yardbirds covering Howlin' Wolf.  Burnett even said it was the best version of his song.

Tje Allman Brothers Band covering Taj Majal's version of Statesboro Blues, which became their signature tune during Duane's leadership of the band.  Tah dis not write the song, but listen to his version and you can see where they got theirs.

Finally, Dolly Parton covering everybody, aometimes with the original artist on her new rock album.
