Chateau Rabaud-Promis (1988)

Don't drink those Sauternes just yet. I think another 6-7 years will make them perfect. And Agonanon, try some really good bleu cheese, i.e. Colston Basset Stilton, with your Sauternes instead of strawberries and see what you think. Cheers!
JOND: thanks for the recommendation about holding the Sauternes a little longer. WineSpectator was not much help in that department! What about a Chateau de Rayne-Vigneau 1997? Yes, with stilton!

How could I forget about Port. Preferably a 10 or 20 year old Tawny or a LBV, and for a special occasion a Vintage, accompanied by Stilton and/or walnuts. Mmmmm......

Wdhsvbgod, I recently sampled a 1998 Cabernet Franc from Chateau des Charmes, very good and would challenge many a St-Emilion.
